Stéphane Moreau, inspired by Vincent Dauvissat, elevated his family domaine to the pinnacle of Chablis Domaines over nearly two decades. As a dedicated artisan, Stéphane prioritized healthy, ripe, and balanced fruit, avoiding green wines often mislabeled as possessing classic Chablis "minerality". Preferring later picking to ensure pristine fruit without botrytis influence, Stéphane's wines undergo extended aging sur lie (18 to 20 months) in a blend of used demi-muid oak barrels and steel tanks. Each Chablis Cru reflects distinct characteristics, from the fruity freshness of Vaillons to the powerful minerality of Montmains and the refined saltiness of Forets. Despite his untimely passing before the 2016 vintage, Stéphane's wife Virginie courageously continued his legacy with the support of his former winemaking team, poised to lead the domaine to even greater heights.
