Displaying a vibrant garnet hue, this wine opens with an aromatic bouquet featuring notes of red cherries, violets, earthy nuances, complemented by subtle hints of licorice and spice. On the palate, it reveals cherry fruit flavors interwoven with savory undertones, supported by firm yet velvety tannins. The juicy fruitiness harmonizes seamlessly with crisp acidity, structured tannins, leading to a lingering and mouthwatering finish.
Crafted through meticulous hand harvesting and destemming, the wine undergoes 100% wild yeast primary fermentation over a period of 20 days on skins. Natural malolactic fermentation takes place in barrels, followed by maturation in 100% French oak, with 25% being new. It matures for 17 months in wood with a single racking, without any fining or filtration, allowing the wine to express its true character and complexity.
